Hi,

Keen to try and homebrew a chorizo flavoured beer after having a really good chili and chorizo lager from Otherside Brewing in Perth, WA.

Thinking it's probably a case of using a chorizo powder/rub type thing in secondary. Has anyone tried this? Any tips/instructions?

Thanks,

Undeez

I'll take your word that it was really good as it sounds bloody awful, but much of the flavour in chorizo is from smoked paprika, garlic and salt so that's where to start. I think you'd have to do an awful lot of experimentation and be prepared to have a few undrinkable batches before you got close to what you were looking for.

..buy some smoky bacon crisps and eat those at the same time. If you do some how many pints will you brew? I would try it but maybe 40 pints might be too many...

I love Chirizo and I love beer, not sure id fuse the two together but I think you are on the right track a secondary with a rub or spice combination..

I would experiment though Like Linal suggests as it could be very hit and miss

I'm not loving the sound of this I have to say, but as has been mentioned, the main flavour is smoked paprika (I would definitely skip the garlic). Why not try adding a little to a glass of lager to see what it's like?

Trust me, I wasn't expecting to rate it! Cheers, I'll have a mess about with it then

Fat washing. It comes from cocktail making and has been used to add stuff like bacon flavour to beer.

1. Soak chorizo in alcohol something like vodka
2. Freeze it
3. Then scrap the frozen fat off. The chorizo flavour will infuse the vodka
4. Add chorizo flavoured alcohol to beer

Thanks I'll give this a bash - done similar with a porter with cacao nibs/vanilla. You lot don't know what you're missing

And risking sounding dumb here, you'd cook the stuff first right??! Approx how much?
