How much water to use?

Hi!

Being fairly new to all grain brewing I have a few questions.

Here is the first.

When brewing to a recipe, how can you calculate how much water to mash with and sparge with to end up with wort of the original gravity as specified in the recipe?

I use beersmith, it tells me how much to use for each stage, it even allows for the dead space in my HLT, mash tun and boiler :)

Free download for a trial period, not horribly expensive once the trial period is up.
