how much carared?

I am planning a kind of american red beer.

3.600 kg Maris Otter Malt
0.150 kg Amber Malt
0.200 kg Crystal 120
???? carared

Going to hop with apollo and citra

How much carared do you think I could add? I was thinking 500g but have never used it so I have no clue really.

edit: what about 40g black malt as well?

Up to 25% but at that rate I would not add any other type of crystal.

I agree with Rob, but I'd say 10% as a starting point for an American red.

Decided on

3600g maris otter
150g amber
200g crystal
500g carared
20g black

I wont get the same sweetness from the carared as I would from crystal will I?? If so it will be too sweet.

Carared is a crystal malt that has been kilned slightly differently, so yes you will get some residual body and sweetness from it.

At the moment you have got about 15% crystal malt by the looks of it. I wouldn't worry too much, go for it.
