Usually I've leave beers fermenting 10 to 14 days when it's been cooler too. This time I'll have to leave for 16 days as the last couple of days I won't be home enough to even check the gravity, shouldn't be any issues with doing this should there?
Also the HBC doesn't mention sugar required to bottle. Ice usually put a very small measure in each bottle, should I replicate it this time too?
