How long to leave a kit in the fermenter?

Hi all

There is a lot of discussion about how long you can leave a kit in a FV, i just wanted to ask about this too, i usually start mine of on a Friday, and even though by the following friday its finished i generally dont bottle it until the Friday after...Friday is generally the only day of the week i get time to do it...i have never really had a problem doing it this way..

Is this to long to leave it in the FV or do you good people think that 2 weeks from start to bottling is ok?

2 weeks sounds just about perfect :thumb:

I can bottle in the week, so I usually work around 10 - 12 days, but I have once had to leave a brew until 3 weeks. It was still fine.
 
I agree with Moley!

I have left a kit well over two weeks (due to being lazy!!) :rofl:

It didnt prime as well in the bottles, but i'm not a huge fizz fan anyway!!

I think betwwen 10-14 days is pretty spot on, having said that my latest kit was kegged at 8, but i did want enough yeast suspended to prime naturally in the keg!

i dont believe it will harm the brew leaving it longer, certainly not from an infection point of view.
And although everyone tells you to not leave a brew too long on spent yeast i have never tainted my wines or beers!
