how long to chill out....

After boiling and chilling, how long should I leave the wort in the boiler before draining off to the fermenter ?
I usually drain off when its at the pitching temp after about 20-30 mins, but I seem to transfer an awful lot of break material and proteins across, and am wondering if I should leave it for a couple of hours to settle with the lid on ( concious of it being open to infection etc. )
 
What's your filter setup?

I have 15mm copper pipe with little holes drilled into it. The hops hopefully gather around this as the wort flows into the pipe, and creates a filter bed that will trap most, if not all, of the break material.

Generally it works best if I have at least a moderate amount of hops in the brew - it doesn't tend to work so well for the brews that are very lightly hopped.

I would be wary of leaving it too long between cooling and pitching the yeast as this is when it's at it's most vulnerable to infection :hmm:
 
yes that's my problem no hop strainer as yet ( bad tap ) so hops go into hop socks so no real filter as such
