I've been putting off brewing for ages due to the hot weather but now stocks are low enough that I have to get things under way. I've got temperature control for one FV but not the other. With the exception of saison yeasts (not a huge saison fan) what strains would you recommend for brewing in the mid-20c range?

Yes I got them was it in the bargain offer? they should go well with a wheat. I used the CML kristalweisen yeast with one and it was good and dropped clear if you want a clear version

Yeah, I got them in the bargain offer too. Given the heat I've decided to play it very safe and only brew in the fridge until things cool down again. It's 27c in the coolest part of the house at the moment and I just don't want to risk it, so I'm going to use the Premiant in a Vienna lager, then when the fridge is free again I'm doing a Mandarina / Galena pale and then a Marynka / Brewer's Gold IPA to get through the rest of the bargains. Hopefully after that it'll be back to sensible, brew-friendly weather!

I like the mandarina but it is very subtle and can get lost in IPA hops but a nice orangy/tangerine flavour. They all sound good to me I am just going for a bitter on my next brew of the white shield typo

I like White Shield, good old-fashioned IPA.

Did my last brew 2 weeks back specifically with Mangrove Jacks M20 Bavarian wheat yeast.
I know my insulated box is a steady 23-25c range in this weather, and the yeast is good up to 30c.
During the winter I can heat it up to pretty much anything, and if I can find a suitable donor fridge I'll set it up for cooling too. It's a useful space if properly set up and would probably take 5x 25lt fermentors quite easily.

Don't be too quick to dismiss Saisons, they don't have to taste like Dupont. I like to brew them using US and new world hops, like a US IPA but fermented with saison yeast and a bit of honey in the last 5 minutes of the boil. Super refreshing and delicious. I use the dry yeasts though, most of which are French saison strain, which gives more of a citrus/spice flavour. You can also brew something called a Grisette with the same yeasts, more hops, lower ABV.

Patersbier is good in this weather too, using Belgian ale yeast. Ready in about 4 weeks, session strength, super refreshing in the heat. Also super simple to brew.

The warmer weather is good for my brewing, as I actually prefer these styles and it makes it easier to keep them warm. lol
