Just bought Greg Hughes book "Home Brew Beer". There are some great sounding recipes, but as most use a 60 minute boil, lots more hops than I am used to using are being suggested. I normally boil for 90 minutes and use around half the hops that are being used in the 60 minute boil recipes (depending on recipe). Is there a way to convert a given quantity of hops used in, say, a sixty minute boil, for the correct quantity to use in a ninety minute boil?

Easiest way I think you shoudl grab some brewing software pump your numbers in and adjust accordingly to the IBUs..

Also you can change the alpha acid rating on yoru recipe as there is a good chance what you buy will differ to the recipe

Why not just use the prescribed amount of hops? A lot of hops can actually be a good thing. In fact, forget that. A lot of hops is most definitely a good thing.

You could still do a 90 minute boil but put your 60 minute addition in at 30 minutes, that way it will be in the wort for the same amount of time, any other additions adjust accordingly
