I'm Paul, from Belfast. 38 Software Engineer, driver, motorcyclist, paraglider, home brewer.
Brew history:
1 - Youngs lager kit (came with the xmas kit) - Xmas
Made a mess of it. It was drinkable. Drunk it - interesting to sample a litre every day from 3-20 days. Not recommended.
2 - Coopers lager kit (hadn't learnt yet) - Jan
Twice stalled ferment. Bottled too early. Cider twang, took weeks to go away, had the last bottle last night, still crap TBH.
3 - Coopers Real Ale + DME + Sugar + Nottingham Yeast - Jan
It had a moment, at about 2 weeks bottled where it started to look up, but... the cidery fruity twang took this one over in the end
4 - My Red Ale 66.6 - Coopers Draught + Spec. Grains (500g Caramel malt) + DME, Challenger Hops, No sugar, Coopers yeast - Jan
BINGO. We have a winner. 1 week in the bottle and it was carbed, malty, intentionally sweet or caramelly/toffee'y (LOL). It only lasted another 3 weeks, poor thing, I miss it and it did get better. I sampled it back to back with a Smithwicks. It wasn't 'far' off for my standards. Smithwicks is a bit darker, bitter'er and had a better hop flavour, a lot cleaner too.
5 - Irish Red Ale - Light DME + Crystal + Caramunch + EKGs and Williamette + WYeast Irish ale - Feb
I had high hopes for this one, cost a fortune, £41, "no kit", "no sugar". It has worried me, but it tastes great. I think the previous batch spoiled me. It's first 2 weeks week in bottles had a pepper taste and after taste, but this has finally gone at 3 weeks. It also has a nasty habbit of vommiting the sediement into the bottle.
6 - 10litre Test Ale 1 - Extra Light DME + Crystal + Caramunch + EKGs + Nottingham Yeast - Feb
Still only 1.5 weeks in bottled.
7 - My Red Ale 66.6.2 - Coopers Draught + 100g Caramunch + 100g Crystal + 300g Carared + Target + Challenger + Coopers Yeast (YeastVit and Protofloc) - Feb
Second week in fermenter, OG 1.048, FG 1.015, not bad.
8 - 10litre Lager-like-attempt-1 - Light DME + 100g carapils + Saaz hops + Mauribrew Lager Yeast - Feb
Currently taking up 90% of my beer fridge at 12C, not even a week in. Don't expect to see this in a bottle until I get back from holiday in April!
Equipment:
12.5 litre boil pan.
Paint strainer bags
2x5.5gl Youngs fermenter buckets.
Bottle wand.
72x1litre PET bottles.
