OK I have just come to bottle my IPA and when i opened the air lock there is a film on the top with white strands in it, it looks like a mould, not much of a smel off it but i haven't broken the skin yet. Any ideas? or is it ost

Ok no vinegar taste but the ale i was reffering to was my stout, i had the barrels mixed up, i noticed as soon as i starter syphoning off lol, not a very good start lol. Anyway all bottled ready to be put to one side for a fewe weeks

Sometimes you get a waxing translucent film which can be hop oils and other oils out of the grains especially if you are using oats. But in my experience (and I have lost 2 brews to acetobacter) a white film is usually aceto bacter even if it tasted ok it creeps up on you. My last one to turn had a slight film on it which I kept skimming, it tasted ok and I was unable to bottle for a few more days. I left it came to bottle and it was definately acetobacter   .

If you have bottled it you may be ok as acetobacter need o2 to produce vinegar. You will soon know when you open a bottle. If it is infected when you open a bottle chalk it up to experience and put it all in an open container covered with a tea towel and leave it for 6 months and hey presto pickling vinegar. I kept back 2 gallons from last year now pickiling onions and this year I have kept 60l of stout which I lost so a lot of vinegar.
