Hi all

I’m doing a extract saison here is the ingredients I’m using

Crisp Caramalt (250 grams)
Weyermann® Munich Malt I (300 grams)
Nelson Sauvin Pellets (50 grams)
LALLEMAND Belle Saison 11g Yeast (1 packs)
Premium Grade Light Liquid Malt Extract 3kg Pouch (1 packs)

I’m wondering if there is any spice or other flavours I can add too it

Hi Jason, I put three cardamom pods in a 20l saison that turned out nice, as long as you like cardamom. Just finished bottling another that I added orange peel and mandarina Bavaria hops to which I’m looking forward to. Also have added coriander seeds in the past.

I’m not sure what would go well with nelson sauvin hops though.
 
Thanks for the info. I got this from the malt miller but the instructions to do it is a bit weird for what I usually do. I’m still very new to all this Brewing
 
What @Keats says is good, I've also had rosemary and lemon saisons, I made a chilli saison a couple of times too. I know people love to add fruits to saisons, and this time of year there are a ton of blackberries which will go well.

That's a good combo; every so often I brew a lemon rosemary blonde ale.
 
Rosemary and lemon sounds great. Shame I’m well stocked with saisons at the moment but will try that next time I make one. What amounts of lemon and rosemary do you both use?

I used to do 3 gallon batches. I put the zest of 1 large lemon and 1 teaspoon of bruised rosemary into a fine mesh bag and let it steep for 20-30 minutes after turning off the heat.
 
I've not made a lemon and rosemary saison before, only drank a couple. I've added lemon into beer before though and I use home made extract. Peel the skin off (but not the pith) a couple of lemons and leave to soak in vodka for 5 days, then throw into secondary for a few days.

Rosemary can have a strong flavour so I'd imagine it can survive the boil. A few sprigs in there should do the trick, but if not then maybe boiling some in a small amount of water and putting it all in secondary would probably work. Making a rosemary beer is on my to do list!
