I've got a boil on for a house best and was hoping to use a white labs burton yeast. However I am not sure about the starter I made as it hasnt gone as I'd expect. It never had a krausen. I added 100g in 1 litre when I made it on thursady. I added the same again on saturday. The wlp 013 I had aswell had a head and tastes clean and smooth now. The burton 023 tastes very green apples. So it is kind of working. The question is, do I go with it or use something else?
 
Only ever used Burton several years ago and don`t remember how it preformed. They don`t always show a lot of life, I go by the layer of yeast on the bottom, if you have steped up you should have a decent layer.
 
I decided to go with it in 3 gallons and took 1 gallon off for wlp013 and 1 gallon for 051. that way if the burton doesnt go at least I'll have 2 gallons for a yeast comparison
 
That's good news :thumb: I think it's amazing how different the yeasts can be in terms of how they take off and ferment out.
 
I had a similar 'problem' with WLP550. It just didn't look as though it was doing anything in the starter - some light frothing and the odd 'gloop' but not the rocket-like performance I had expected.

I took the gravity and it was down to 1009 in 2 days (from 1040). I doubled up and the same thing happened - not a lot of visible activity but it was obviously doing something.

When it came to brewday, I just didn't trust it and split my wort, pitching the WLP550 in one FV and a starter I had cultivated from the dregs of a bottle of Duvel in another.

Both beers worked out brilliantly, both taste fantastic yet totally different to each other (the WLP one is still quite 'bananaish' but it's fading, the Duvel one tastes very much like, well, Duvel actually).

It was a lesson in patience.
