Hi All,

I was hoping for some advise, I am currently on my third brew - my first a Woodfords Wherry which came out simply fantastic and then a Coopers Mexican Cerveza... currently in bottles.

So last Saturday morning I decided to put my Muntons Imperial Stout into the FV... took a a reading of 1042 which all seemed normal, I then placed the FV in the same place as my last two brews which is next to our Aga - temp sits at a constant 23C...

So by Sunday it had gone mad!! there was foam galore at the top like I had never seen and the air lock was virtually constantly bubbling... Monday airlock was average but the foam had all gone... It is now Tuesday morning and there is literally no movement in there at all just a black liquid with a smooth top with no bits floating...

So I just took a FG reading... it is now at 1012...!! which is where I would expect it to be by Saturday coming if my last two were anything to go by...

So as it is at 1012 I presume it is done????
Could the yeast be some crazy strain of hyperactive?

Any advise would be good, I have 5 gallons sitting there and not sure if I should Barrel...

Hi Scruffy, You'll find a lot of dark beers with the right yeasts will give very quick violent ferments, they can easily finish the bulk of the ferment in 12 hours once the yeast is established, so anything from 24 - 36 hours and it could well be done.
Don't rack off at this point though, the yeast will have made undesirable compounds during the fast ferment (and normal ones) and it will get rid of these during the next few days.
Try and give it 5-7 days, have a sneaky taste and smell at 5 just to make sure all's smelling and tasting good, and rack when ready :thumb:
