help needed pls

hi i had some ready to eat de stoned prunes 500g and added 1kg of greek currents and another pk of dry mixed fruit 375g also 2ltrs of black grape juice (welshes) i also added 7llbs sugar I added boiling water onto the dried fruit soaked it then strained and chopped added sugar and more boiling water, when cool i added my acid,nutrient yeast ect for a 5 gallon mix, I have been told i need to add more fruit i bought some youngs medium red grape juice concentrate 900g haven't added it yet and i also have 3ltrs of blueberry and 3lts red grape juice supermarket types that i can also add but not sure how much of above i need to add I have another 3 or 4 days of stirring in bucket before i strain fruit off i do have a book what i write all the starting sg in but couldn't do a prper reading and it did change from the first one i did to one an hour later but can't find where i wrote it down...will have to find it can anyone advise what of the above would be best to add and in what quantity's please

I found it when i first put in bucket it was 1.120 then checked later it was 1.060 am not sure if i should do one now or wait till i strain into fermenting barrel
 
Welcome to the Forum MW, sounds like you are going to have a powerful brew there!
I would suggest that you didn't do too much at one go, you won't know what's produced what flavour.
 
just an update.I have ended up with 15 gallons yes 15 lol. I decided to experiment i had made a ribena 5 gallons and it was rubbish i didn't boil ribena and made loads of mistakes. ended the fermentaion of it too early. anyway i decided to split my dried fruit mix into two containers i seived fruit topped one up with more red grape juice and blueberry juice. and a third of my ribena mix to fill my 5 gall that is still bubbling nicely took regular sg readings and yesterday it was just at 1.020 so is coming on nice. the second container i used a third of the wine a third of ribena topped up again with blueberry and red grape juice and ribena and the dried fruit which didn't have any value except to help fermentation get going that too was bubbling away like mad and sg level is now 1.030 the last one exactly same again moved seived fruit in and strained off that is now 1.035.......All in all never think you can't rescue a ruined wine.it smells like a christmas cake looks good and i dare say when fermentation stops and wine is racked it should have a nice taste :) just thought i would share my happiness :) :cheers:
