help melon wine

Please can somebody give me info on melon wine, I'm a chef and have 8 kg of melon ball that are going to waste, I wanted to make some wine with it, I have a 23 ltr brewing barrel, I need to know how much sugar and how many packs of yeast to make 23 ltrs of wine.

Any help would be much appreciated

I just did a search on the internerd and found this one:

4 Ripe Honey dew Melons
¼ lb Bruised Ginger root, sliced thinly.
4 kg white sugar.
1 litre of White Grape concentrate
1 teaspoon of brewing yeast.
20 Litres Spring water

Wash the ginger in the sink, then on a clean work surface give the Ginger some good bashes with a rolling pin or something similar to bruise it. Then place it in a bowl and set aside for a few hours for the bruising to take effect.
Sterilise all your equipment including your fermentation vessel.
Wash and cut open the melons and remove all of the seeds.
Cut the Melon into segments and remove the meat from the skin.
Mash the Melon meat in a pan then add to the fermentation vessel.
Add the sugar to the fermentation vessel and pour on 1 gallon of boiling water and stir well.
After the ginger has rested a while cut into thin slices no more than 5mm and bring to the boil in a large pan, then continue to simmer for a further 15 minutes.
After the ginger has simmered gently pour into the fermentation vessel.
Add you grape concentrate to the fermentation vessel and give it a good stir.
Pour the remaining still water into the fermentation vessel to the correct level and add your yeast.
Give everything a final stir and place the lid with the fitted air bung on.
Place the Must in a warm place to ferment etc.

I've not tried it, so can't say how it turns out though!
