I want to try making a lager and I know what taste/texture I want but I'm not sure about what yeast or grain to use.

I'm thinking of a peppery, herby taste that is light but full bodied with a medium ABV, maybe 5 or 6%. Ingredients wise I thought of pepper corns, parsley, coriander, lemon thyme.

Ideas, suggestions?

When I want to make a style that I've never made before I'll go onto Rate Beer or Beer Advocate and find the top ten commercial beers in that style. I'll then try and find clone recipes for these and look for common themes for hops and grains and the percentages used. Also if there are any in that style that I particularly like I'll look these up as well. With this information you should be to come up with a really good recipe.

I would make the base to the beer. Ferment it out, then add your spices after in a mesh bag.
Remove the bag when it tastes as you want.
