Hello all!
I've been doing very basic home brew for only 2-3 years now. So far only mead and elderflower champagne/wine.
First ever was a perfect elderflower fizzy and since then have been hooked although not too prolific. My second year's turned out a bit cat's-pee-ish and this year I opted for a different recipe.. This year I went for Andy Hamilton's recipe and decided not to go the fizzy route. It started out lovely but several months on and I have 1 1/2 undrinkable gallons of very bitter caramel flavoured hangover cause! (any ideas??) I have recently thought about mulling it to disguise the bitter flavour, will post how it goes.

My mead (from cappings) just been racked into bottles for ageing - a sneaky taste revealed a promising future (I hope!).

That's me anyhoo.. Be nice, I'm new to posts and it's a bit confusing.
