I have been brewing for about 3 or 4 years now. I do a fair bit of cider with a press in the autumn and like to experiment with various wines.
I tend to keep things pretty simple, I rely on wild yeasts for my cider and don't use any chemicals or additives in my wines.
So far I have had good success in :
Cider from cider apples and eaters
Sloe wine
Elderflower wine
And am soon to try my bullace from last summer. I also have some rosehip in a dj which I believe needs at least 2 years before drinking so still a long way off drinking that yet.
