Am I bottling to early. I have done several kit brews and it's coming out nice tasting but it's really fizzy. So much so I can't pour it from the bottle it needs to dir in the fridge for s day before I can open. Maybe using too much priming sugar. Any thoughts.
 
You will need to prime, but if your hydro readings are stable over 2-3 days and the reading is low (1010-1012) you aren't bottling too early.

How much priming sugar are you adding ?

Clearly carbonation level is a personal thing but for Coopers lager style kits 150-160gm for 22-23l batch is about right - this equates to 7grams per litre, or 3.5grams to a 500ml bottle if priming each bottle.

Not used priming drops as I batch prime in a bottling bucket before bottling from that primed bucket.

I use regular kitchen granulated sugar for priming, Tate and Lyle or similar.
