Torrefied Wheat is often mentioned as being added to the grain bill to improve the head retention of your beers

Simple question.... Why ?

what does it give to the wort/beer to improve the head.

If my wife will excuse me I get good head but invariably it doesn't last........ :shock: :shock:

What else is supposed to assist ?

better than torr wheat just use wheat malt , around 200/500g per brew should do it , infact using a good amount of wheat will give a nice flavour to your beer too but you would need a good kg or 2 for that , i am finding that i just love wheat beers (not just german type) seems to give a creamer smoother taste if used in a brew .Another grain you could try is biscuit malt again around 200g but that will affect the taste , also carapils is a good 1 to try , like in lagers etc http://www.brupaks.com/BRUPAKS%20GRAIN% ... %20WEB.htm
 
AS the wheat chief said, wheat malts the way to go (unless ur gluten intolerant) as it adds proteins that trap the co2 (and other flavour compunds otherwise lost) and make a bubbly head
