I’ve just received my stout kits from GEB. The Oatmeal comes with a Lallemand Nottingham yeast which needs a starter making. I’ve got some S04 in the fridge harvested from a 5.8
-ish ale, would this be a better yeast for the stout? It certainly flocculated well in the ale.

I’ve never harvested yeast so excuse if this is a numpty question.
 
What size batch are you making? Nottingham in a regular size batch shouldn't need a starter.

23l - I think the yeast character will get buried in the complex flavour of the stout. However it’s quoted as working down to 10 degrees C and I don’t have a fermentation chamber in the garage it may be the better choice.
 
How strong is it? A single packet of Nottingham will eat anything and finish at 1.010 almost every time. It's not fav yeast for a stout as I find 1.010 a touch dry for a stout. I'd use the s04 personally. I still love Nottingham for ipas though.
