Half a Sachet of Yeast?

Can I use half a sachet of yeast today, and then the other half next week?

I wanted to make 3 gallons of blackberry wine, so we went out to pick the 5Kg of blackberries, and found that we are a little late in the season, and only ended up with 2kg. So we have decided to brew 1 gallon of blackberry wine (its already started with the 2 tbs pektolase and 1 capdown tablet in the gallon) and do two more gallons of blackberry wine. However, I only have one sachet of yeast around! Should I get a new sachet for the elderberry, or use half the sachet for the blackberry and half for the elderberry (which starts next week).

Use the whole sachet now :thumb:
The reason being that there is sufficient yeast and nutrient in one sachet to get your wine going quickly and therefore eliminate the risk of contamination.
Saving half an opened packet of yeast invites the risk of infection :(
