Gypsum?

What on earth does Gypsum do in brewing? Is that not for plasterboard? Just been reading few threads and noticed it appearing few times...thanks
 
As far as im aware, gypsum is used in brewing to adjust mash ph, assist the yeast in fermentation, accentuate hop profile and to aid in clarifying your beer.

But dont take my word for it, as ive only just started to use it myself. I add 1/2 teaspoon full to the mash and another 1/2 teaspoon full at the start of the boil.
 
It is used to add calcuim to the mash and boil.
Calcium is very important for a lot of chemical reactions that take place in the tun and the boiler.
It also accentuates hop charachter.
