Prince, purple rain, he is very underrated,
I always had the feeling that Prince was underrated by the crowd who likes guitar solos because they didn't like his music, and the crowd that liked his music didn't care for guitar solos.

Anyway, I have already heard too many guitar solos in the past 41 years to have definite choices, but what pops up in my head, in not particular order of preference
  • Accept, Starlight
  • AC/DC, Let There be Rock
  • Metallica, Hit the Lights
Too much other many honourable mentions
 
Think if I'm asked on different days I'll give different answers to my top 5, but always bubbling in and around
Pink Floyd - Comfortably numb (Eric Gales - Too close to the Fire reminds me of comfortably numb in some ways I can't quite pin down)
Dire Straits - Brothers in Arms
Eric Johnson - Gem
Louis Bertignac - Vas-Y Guitar
Alter Bridge - Rise Today / Blackbird
ZZ Top - Jesus Just Left Chicago

That's ignoring some greats like Jimi Hendrix, Stevie Ray Vaughan, Joe Bonamassa, Rory Gallagher, Steve Vai, Joe Satriani and Tommy Emmanuel who I cant easily pick a solo from. Not sure if mostly instrumental stuff can really count - hence my top 5 has 6 in it, not sure I can count Gem by my own self imposed limits. There also a wider thing about some guitarist / groups that don't really go for the big solo but have lots of nice riff based noodling like Johnny Marr.

On the OP list, always had a soft spot for solo in 'the one and only' which I think was played by Nik Kershaw who is vastly under-rated, largely based on his early pop career. Also saw Cutting Crew in the Duchess of York in Leeds, probably late '80's, guitarist did a superb cover of Little Wing,
 
I'm a guitarist, my band recently started playing Comfortably Numb after many years of being frightened to go near it: I think it's the best solo ever and one of the hardest to learn, not technically but the subleties David Gilmour put in. Someone said it moved him to tears when I played it, that's the best compliment I've ever had (I'm a fairly average guitarist).

Surprised no one has mentioned The Eagles "Hotel California", regularly voted one of the best solos of all time.

Another of my faves is Tony MacAlpine "Tears of the Sahara"

1. Comfortably Numb - Pink Floyd

For me Rock Bottom is no 1 and always has been...and Hackett has done way better stuff than Supper's Ready - Spectral Mornings? Every Day?

Whilst not strictly a solo, rather an instrumental, have a listen to this.

The entire concert lasting just over an hour (also on utube, live in Texas 1988) is a masterclass in guitar playing.
Hope you enjoy it as much as I do. Had the pleasure of seeing him at the Sage in Newcastle during his European tour a few years ago. His tone and technique is sublime.
 
My favourites change all the time, but some playing on live albums are always near the top:

Michael Schenker on Rock Bottom and Lights Out (from Strangers in the Night). I think these may have been mentioned....
Uli Jon Roth on We'll burn the sky from Tokyo Tapes.
Jimi Hendrix on Johnny B Goode from an old vinyl album called Hendrix in the West
Zal Cleminson on Vambo from Live by Sensational Alex Harvey Band.
Loads of Rory Gallagher stuff, but Shin Kicker from Stage Struck is just what you need to clear the cobwebs away.
