Quick question. Brewed some barley wine yesterday. A krausen has formed on the wort with some patches of grey scum.
Do I skim the scum off or just leave it alone?
Thanks.
sounds like some particulate matter from the brew, hop /grain dust/ break material.. that was on its way dropping out as trub before the yeast activity lifted it out.
imho there is more risk involved in pulling the lid off and standing over it letting all sorts fall off you onto it when skimming off than just leaving it as is, it will fall out with the yeast at the end of the primary. it may end up as a dry yeast island floating on top, if so a sharp rap with a wooden spoon to the bucket side is generally enough of a shock to break the surface tension keeping it floating
