So I visited the Partizan brewery at the weekend and had their black IPA and it was really lovely. Got me thinking about some of the other black IPA's I've tried and how much I like them so I think I should probably have a go at making one myself.
I've got my hops sorted (chinook, citra and mosaic) but I'm a bit unsure about the grain bill. From what I've read, a good bet is to take a normal IPA grain bill and then sub in some carafa iii so I was thinking of going for
90% Marris Otter
5% Munich
5% Carafa iii
I have some crystal and biscuit malts knocking about too so could add them in there but I'm not certain if they'd compliment the hoppiness or if it would become too cloying.
Also, does anyone have any advice about when to ad the carafa? I've read that adding it towards the end of the mash yields the best results.
