Hello all I started this as an experiment and its proven to be a success
So I thought I would share

Ingredient.

1200g of tesco golden syrup
2 whole cloves
1/2 tsp of cinnamon
1 tsp yeast nutrient
1/4 tsp citric acid
1 tsp tannin
1 tsp pectolase
And a 14g packet of tesco's make bread yeast
I started this on the 30th of may
All I done was shove everything into the dj and the syrup I used hot water to melt to make it easyer to play with lol
It stayed cloudy for ages but then it cleared out and was perfectly clear

I bottled on the 23rd of july and it tasted really nice but young so im leaving it to xmas day too open so that it would have had 5 months to mature in the bottle

All and any comments/suggestions welcome

I just used the dirt cheap one but it comes out really nice and you can still taste the syrup but it dosent over power you and has a slightly sweet taste. Annoyingly I for got to take a final gravity but it started at 1097 o.g so should be around 14%
 
Interesting, it's almost like a pauper's mead!

What is the finished drink like? Is it still sweet or has it brewed through to dry?
 
Unsure at the moment but when I bottled there was a sweetish taste to it but I left in the fermenter for about 3-4 weeks and I forgot to take the final gravity so I won't no unless i can us the hydrometer when I open a bottle at xmas
Or sooner it I get impatient and open one sooner
 
Is the pectolase required? I don't think there's pectin in golden syrup (there isn't in T&L, not sure about own brand).
 
I'm still newish to brewing and I'm experimenting with the pectolase I know it helps with pectin haze but I thought it helped to clear maybe not, and I've called it a metheglin because that was what was on my mind when I thought of making it and golden syrup is cheaper than honey

But because I like it a got 500g of frozen mixed berries from tesco and I want to make maybe a gallon with that and the golden syrup and see how that turns out but would 500g be too much? And would I need extra pectolase?

I opened one of my bottles and I did enjoy it but I would say use one clover as when I did it I didn't know that they are so strong also I would add a bit more cinnamon with the black trickle I have never used/eatten this so I would no wat it tastes like but I would think its got a strong taste because its used in beer so 2 clovers would be ok and posaibly more cinnamon

The 1.2kg of syrup is because I got 2 600g jars of the stuff

I've got some more to try this recipe again and twick it a bit I'm just waiting for an empty dj

And I just stuck everthing in to the dj to ferment nice and easy that way lol
 
Going to start this off tomorrow with home made Golden syrup :grin:
