Can you not just use something like clarityferm in your brew which breaks down protein, and as gluten is a protein it breaks that down as well?

That was my first thought as well, most commercial gluten free beers use it I think. For example, BrewDogs Vagabond is just a pretty standard beer with Brewers Clarex added.
 
It looks like you want to avoid every molecule of gluten but I thought i'd point out anyway, even yeast cultivated on barley is not supposed to have any barley in it but could potentially have 0.01% (my total guesstimate) and once thats diluted in 5 gallons of beer there would not be any measurable amount.
