I am gonna make a strong but simple ginger beer and was looking some info on the right yeast to use.
The recipe states using an ale yeast results in a better flavour..
The expected abv is between 7-9% :shock:
Recipe} grated root ginger ,honey and dark spraymalt..20ltrs

I think it was Pittsy that said to me before that an ale yeast won't end up as dry as a champagne or wine yeast. I made some ginger beer before with Super wine yeast and it was dryer than Ghandi's flip flop.

Yeah mine made with champagne yeast was super dry, added 8tbsp of splenda prior to bottling and it really balanced it out nicely

..4kg of dark spraymalt along with 1650g of honey.i guess the ale yeast must compliment the dark spraymalt.

I'll be very interested to see how this turns out! Experimental brews are great!

I would not like it to dry or to firey so i guess this will have to be tried.
It could end up like door varnish. :eek:
 
I did an AG ginger beer topic here last year

I think the bittering hops were a mistake and possibly S-05 wasn't quite right.. but I must try again..

Also think there are still a few litres in the keg :hmm: .. must try and find it and see if its improved
 
So far I've made ginger beer with champagne yeast, wine yeast (the cheap Young's stuff) and cider yeast.

My personal preference is the cheap Young's wine yeast, it doens't seem to end up quite as dry as the champagne yeast, the cider yeast left it a little too sweet for my preference.

The artificial sweetners do make a world of difference when the stuff comes out massively astringent as well, when I tried my first go at it the wife thought I was puckering up for a kiss :D

I might try the HB cider yeast with sweetner.I would like it sorta sweet to compliment the heat from the ginger.
The young's ale yeast was what i had in mind from the beginning though.Its the dark red packet i think.
 
Just remembered i have a jar of youngs dried active yeast..any comments on this ?
 
Gonna try the Danstar Nottingham Beer Yeast for 1 brew then either the champagne yeast or sweet cider yeast for the other..
