Ginger beer pitch

Guys just mixed a batch of ginger beer and pitched a packet of champagne yeast last night.How long till i expect to see some fermenting action..The temp is ok at 20c ...just one thing ..the packet of dried yeast was dated 08...
Would it make a difference giving the wort a stir.Also i have a brew belt,would that help to get it going if i raised the temp a bit?.
I have a jar of Youngs dried active yeast which i could pitch in a glass with sugar and lemon first to get it going,then add this?
 
Viability of yeast drops with age and you'll almost certainly experience a longer lag time before you see anything happening, if indeed it's still viable at all. It can take a long time for a yeast to get going when it's that old, if you were to try this again I'd suggest reconstituting the yeast beforehand to see if it's any good. So you could wait or add the other yeast, it's up to you :thumb:

Have a look at MrMalty for guidance on yeast viability...it says your packet viability is 1% at 2008 and production is usually 1 year before :shock: ....I'd pitch the new yeast pronto :grin:

I have only just ordered a new packet of champagne yeast as the dried active yeast is dated the same..it will be a few days before this arrives,would this be ok?.I could pitch the out dated youngs dried active yeast in a glass to see what happens now?.
 
So the wort would still be ok if it were to sit inactive untill the new champagne yeast arrives do you think?.I t could take 2 to 3 days am told..
 
On the back of the youngs dried active yeast is states to use 1 level tea spoon full for 1 gallon...what would i use for my 5 gallon wort?.surley not 5 tea spoons?.
