Getting the most out of Belgian yeast

I’m planning a Belgian pale ale brew this weekend and would like to get some good flavours from the yeast, I’ve never brewed Belgian before so not dilute on the best temp to ferment at. The yeast advises a range of 18-28 degrees was thinking 25 might be a good starting point! It’s MJ M41 if anyone has any history using it with some advice.
 
  • Better start at a lower temperature, but isolate your fermentation vessel so that it heats itself.
  • It is a yeast that ferments a long time, because it is diastatic, it processes and ferments otherwise not-fermentable sugars.
  • Use a pitch rate calculator and pitch yeast at a rate of 0.75.
