I recently brewed a Ultimate Brewery Classics - Czech Pilsner kit. It is a "premium" two can kit. Apart from dry hopping with some Saaz, I followed the kit's instructions, even used the yeast from the kit. After about 7 - 10 days in the primary FV I did a taste test and it had a funny aroma and a strong acidic taste. The acidic taste faded a bit, but there was still an unusual flavour. I have only done one kit before that and while I did not expect it to be exactly the same, I thought the smell and taste would not be a million miles off. Both are in the lager family.

I decided to bottle it anyway and after 7 days in the bottle, I opened one last night. While it look like beer, it does not smell or taste much like it. The issue I have is that fermentation was done in the kitchen. We had a couple of hot days in late May/early June, so the daytime temp was in the 21C - 23C range. Q1: Could this account for the off taste or is it more likely I did not sanitise well enough? I have since acquired Starsan.

I was a bit hasty and order another identical kit when I first thought the beer may be off. I will try a liquid yeast in a future batch, but for now I ordered Saflager s-23 yeast, which I want to try rather than the yeast that comes with the kit. The yeast is basically just a silver packet with a number on it.

I am going to build an insulated box in my shed tomorrow and will make the other batch in the next couple of days. Q2: I saw a couple of forum posts on this and would like to know if anyone had any success with this kind of thing. I do not have electricity in my shed, so was thinking of putting a bottle with frozen water on a shelf above the FV in the insulated box on hot days to keep the temp as cool as possible (within the range specified with the yeast I plan to use). As with thousands of guys up and down the country, my wife banned my equipment anywhere in the house where she can see it.

Not really sure re the answer to your questions, but if you are going to use lager yeast you need to be able to ferment at the lower temperature and lager at a cold temp. For this most use a fridge with a temp controller. I don't brew lager so don't have the answers. But I'm sure someone who does will be along with some advice for you.

Please describe the off-flavour.
I've never experienced off flavours fermenting at those temps using any kit yeast.
I assume they provide yeast that inexperienced brewers will achieve decent results with which work over a wide temperature range.
I wouldn't recommend liquid yeast at this stage as there is more to go wrong TBH and I agree with bobsbeer regarding S-23.

Get your process sorted and work on what will give you the best gains such as temperature control and sanitising.
You chose a lager (Pilsner in your case) which is technically the hardest thing to make correctly true to style.

I would look at similar light styles such as Pale/Golden Ale, IPA/APA etc and use a dried yeast where I think S-04 is hard to beat for reliability.

After trying another bottle, the flavour is pretty much an acidic tang that I pick up over the beer. I am horrible when it comes to describe this kind of thing. I do know that it is a flavour which seems to have been present since the first sample I tasted about a week after the batch was started.

My assumptions now are that I may have contaminated the batch by touching inside of the FV after pouring bottled water in or it got contaminated in another way. The kit was only used once before, so there are no obvious scratches on the plastic to account for this. I was sure my sanitising was done properly, so if that is not the cause, I don't know what is. Could off flavours be due to anything else? I used bottled spring water.

I suppose the main thing I was hoping for would be that someone had a similar issue and could help shed some light. I cannot believe the the kit itself would be of inferior quality. I have another identical kit and have a packet of S-23 on order, which I will get started on once my insulated fermenting box is done, which I hope will give me much better (not perfect) control over the fermenting temperature. I have also switched to starsan since the past batch.

I made the worlwide brewary classic german pils(which i think is the cheaper one can kit of the same company) as my first ever brew. This also has off flavours a kind of twang in the after taste! The twang is still there and it's been bottled for over two months.I just put it down to a poor quality product as i have done several more brews with different kits and extract and never had that twang again
