Second all grain to be Fullers Discovery from British real ale book(Wheeler).
Can anyone recommend yeast for this.Has anyone brewed this recipe and if so was it ok or would you advise any changes to it as a result. Can i up the o.g by increasing base grainload slightly to bring it to say 4.2 abv.
I read somewhere you could culture from bottled 1845, is it worth the hassle, is it hassle or relatively easy,would this yeast for a strong ale be suitable for Discovery.
Previous first all grain brew used safale04 for rauchbier recipe. last brew was 23 litre, 2 gallon going into plastic pressure barrel and rest into 500ml flip top grolsch bottles. Sediment was pretty solid after 2 weeks in bottle so worked well.Will be doing same again.
