Is it possible to freeze yeast without damaging it? If so, how do I do it? I've heard something about using a glycerin solution, but don't have any details. I would have thought that the yeast cells would be destroyed when the water inside them freeze?

Ive just took some thwaites nutty black yeast from the freezer yesterday it has been sat in 1 litre of wort in a conical flask and is now showing signs of fermentation. I am amazed i thought it would be dead. Apparently when it freezes it does damage some of the cells. Jim (evanvine) has a chest freezer with lots of frozen yeast he is the man you need to talk to regarding freezing and acid washing the yeast. :thumb:
