Just finished siphoning of my apple and pear wine and my TC into fresh demijohns.
All in all a fairly stress free procedure and, more importantly, it's given me the first taste of my brews.
First up was the A&P wine. It came in at 15.9% before topping up (it was more topped up to lower the ABV than to make up volume). A lot of sediment in this one but that's hardly surprising as a lot of the fruit ended up in the demijohn. Tasted okay, a lot of the fruit coming through. I can see this being quite pleasant in a few months. It's got a lot of clearing to do though. I'm hoping the pectolase I threw in will help.
The TC is at about 6.4% and tasted rough, a really raw alcohol taste to it. I'm going to leave it for a couple of weeks and give it another go. Last week I moved it from the kitchen into the back bedroom where I thought it would be out of any direct sunlight (hiding behind a drum kit!) but the other morning I realised that the top half of the dj has been getting hit by the early morning sun. Is this likely to have an adverse effect on the taste?
Next weekend is probably going to see me racking my gorse wine. High hopes for this one as it smelled great when I transferred it from the bucket to a dj.
