Hi,

On Friday I did my first ever brew, 2 gal of FGB, following the recipe on the forum and started with an SG of 1.043

Fermentation seemed to have stopped by Tuesday, left it until Weds evening and took a sample and the FG was 1.000.

So came out around 5.6% ABV, Great!

However I tasted the sample I took and it tastes very sharp almost like cheap white wine, should I leave it longer before priming in bottles or have I done something wrong? :doh:

I'd say leave it a week or so more. It will definitely taste better with age and carbonating will help too. But I'm not sure if you did anything wrong, perhaps if you post your recipe here some of the more experienced guys could help you out
 
Thanks for the reply! Recipe I used for 2 gallon was:

400g Fresh grated ginger
2tsp Dried ground ginger
1/3tsp Cream of tartar
1 Lemon
1 Lime
1Kg Sugar
2tsp Yeast nutrient
1 sachet Champagne yeast

hi there, recipe looks fine except I would probably up the sugar, when I make ginger beer I normally use
750g of sugar for 1 gallon, but might be worth leaving it a while to see what happens.
