Hi all,

Just put together a gallon of Ginger wine.

Ingredients:

125g peeled and grated Ginger
1kg white sugar
500ml Grape juice concentrate
1/8 tsp epsom salts (Magnesium Sulphate)
1/2 tsp Tannin powder
3 tsp acid
Yeast and nutrient

Added Ginger, sugar and acid to 2 ltrs water and boiled for 20 mins
Allowed mixture to cool
Added GJC, Tannin and Epsom salts
Added 1 Campden tablet to boiling water to dissolve
Put mix in DJ, strained through a sieve
Took OG 1.125 estimated ABV 16% if fermented to dryness
Added Campden tablet and will wait 24 hrs before adding yeast and nutrient

Smells great at the moment.

I’m pretty inexperienced at wine making, so any comment would be appreciated
 
*Update*

3 days in and it's bubbling like mad. Haven't seen this sort of activity in my previous wines. Maybe a bubble a second, and I can hear it in my living room from the kitchen (I have just started using my heat tray again because the temperature in my kitchen is about 18*c)
