Hi all, have had a bitter fermenting all this week the problem ive had is being able to maintain a consistant temp due to the weather here this week 40oc one day 16oc next, ferment temps have been up & down like a whores drawers 20oc - 25oc will this have any effect on finished beer, have used safale so-5 yeast.

The first 24-48 hrs is the most crucial time for fermentation temperature control as it is during the aerobic phase that many of the flavours are created. If the yeast is stressed at the higher end of the range then you could certainly experience some more phenolic type flavours.
 
thanks dunfie, may be ok didn't really get too warm for a couple of days after pitching. :thumb:
