Hi,

I am new here, I started my first brew on Saturday - Cider with a beginner kit. The instructions say that it takes about a week to ferment and that I should test with a hydrometer before bottling. The problem is that I am now going to be away for a week as of Sunday, so if the Cider is not ready for bottling, what will happen if I leave it to ferment for an extra week? Or the question could be is there anyway to bottle early?

Thanks!

Josh

Welcome to the forum Josh
I tend to leave all my brews in the FV for around 14 Days, then move to a secondry for another 5 - 7 days and then bottle / keg.
Its safe to bottle after about 7 -8 days, or when you get the same hydrometer reading for 3 days running.

Thanks for your reply! So is it 'safe' / ok to leave it for 2 weeks then bottle (i dont have a secondary)? will it improve the taste?

Thanks again,

Josh

Don't be tempted to bottle early, you could end up with bottle bombs.

Kit instructions are usually optimistic. It's better to leave it longer, and yes, it will improve for doing so.

Thanks - that's what I wanted to hear!! :D

I will wait till I get back and bottle it then. Hopefully will be better tasting and avoid a sticky wet floor when I return.

Cheers,

Josh
