I have acquired a 60L brand new clip-top barrel. I am going to give it a go as a fermenter. The question is how far up from teh bottom should the bottom of my tap be to be above the yeast cake but not so high that I will leave beer behind..
The barrel is fairly flat on the bottom and there wont be a great deal of dead-space
 
I'd say that you would be safe to mount it with the bottom of the hole for the tap 1" from the bottom of the FV
 
I have the 120 litre blue barrels i did a trial brew & siphoned the beer out to get the level :party: :party: :drink:
