Fermentation and cold crash timings and other questions

Whats your guys thoughts on when to cold crash?

I usually leave in primary for at least 10 days regardless if fermentation has completed or not before cold crashing. Is there any benefit leaving it sat at fermentation temperature or should I just start crashing when FG/fermentation has completed?

I am doing a Landlord clone using the Wyeast 1469. Do you guys ever do diacetyl rests for ales? I do for lagers but never on ales. Not sure if I should be doing this or not.

If adding gelatin, should I add in the fermenter when crashed or Brite tank /keg?
 
usually you crash after fermentation is complete, hopefully you have reached target gravity and its good to put the yeast to sleep so it cant be doing anything else. The ideal temp for diacetyl rest believe it or not is 14 (homebrewers will all say its in 20s but we learned in our diploma course this isnt true) Generally speaking though if you leave your yeast for a long enough period they will clean it up anyway.

Gelatin, you can add once in the keg you will need to leave it for a day or so but it will be carbing anyway. Dump your first pint as it will be mostly gelatin and **** then you should have clear beer.

Personally speaking I am a veggie so wouldnt use it but unless you are really determined to have clear beer I would avoid. If you crash for 3 days most of the **** will fall out and if you can syphon from the top beer that goes in the keg will be not crystal clear but good enough.
