Brewed up on Saturday (belgian beer SG 1.080). Used the Crossmyloof real ale yeast (all I had!) and it started about 6 hours later. Checked today to find it is at 1.014!! Smeels great, just going to give it a day or two to 'clean up' and then cold crash it. In fairness I think it actually finished yesterday:- has anyone else had this happen. It normally takes 7-10 days in my more 'normal' SG 1.050 ish brews. Fermented at 22c in my fermentation fridge as I always do, so not quite sure why it was so quick...
 
My recent Belgian Ale did this, using Safale BE256. The combination of low mash temperature and a large sugar addition in the kettle, makes easy work for the yeast. Simple sugars are yeast equivalent of Pringles, they much through large quantities with no bother.
