Forgot to say the reason for ale yeast is i have no temp controlDon't use Four use CML Hell instead.
Use 34/70 in that caseForgot to say the reason for ale yeast is i have no temp control
I don't know if it's just me and the temperatures I've used with W-34/70 (12-15°C) but this yeast hasn't been that neutral and I'm not a huge fan. It may be that it needs a long lagering period (which I haven't done). I've recently enjoyed a helles made with S-189.The bloke off of Brulosophy reckons 34/70 works at ale temps without issue.
I'm sure some would disagree / have opinions on Brulosophy.
Interestingly, I've just made a lager / helles / bock brew type thing using 34/70 at lager temps and it tastes more like a hoppy-ish ale, so who knows?
To be fair - its only about two weeks out the FV (in a keg) so it could well be thatI don't know if it's just me and the temperatures I've used with W-34/70 (12-15°C) but this yeast hasn't been that neutral and I'm not a huge fan.
