I'd have thought that using an ale yeast would give you an ale, but I'm new to all this game.

Do I take it you don't have lager yeast in stock?

And your PDF didn't upload correctly:

The bloke off of Brulosophy reckons 34/70 works at ale temps without issue.

I'm sure some would disagree / have opinions on Brulosophy.

Interestingly, I've just made a lager / helles / bock brew type thing using 34/70 at lager temps and it tastes more like a hoppy-ish ale, so who knows?
I don't know if it's just me and the temperatures I've used with W-34/70 (12-15°C) but this yeast hasn't been that neutral and I'm not a huge fan. It may be that it needs a long lagering period (which I haven't done). I've recently enjoyed a helles made with S-189.

To be fair - its only about two weeks out the FV (in a keg) so it could well be that

Many moons ago I made my first Helles and was very pleased with it. I used Wyeast 2206 and H. Mittelfruh hops.

Not too long after that I made "Cheatin' Like Helles", fermented with Wyeast 1728 Scottish Ale and hopped with Crystal hops (not that Helles is hoppy) - this was also very good.

So yeah, I reckon what you're proposing will work.

FWIW, the last one I made I used W-34/70. It was good, but a bit meh - my thinking now is it's a style where yeast selection can really make a difference.

But since you're not under any illusions I think with what you've proposed you'll end up with a tasty beer 👍🍻
