Hi, have been all grain brewing for about 6 months. Made a good few brews, mainly NEIPAs as well as some single hop ales to get used to hop flavours and aromas.
I've decided to make a brew with the following hops: Kohatu, Vic Secret, Pacific Gem and Dana. (was challenged to make a brew with hops beginning with KPD and V - don't ask why! )
Was thinking of using mostly MO malt with some Munich malt and wheat. For the hop schedule was looking at using the Dana for bittering then the rest for flavour and aroma. Have read pacific gem can have blackcurrant aromas which is a concern with all the citrus aromas. Anyone had any experience with any of the above hops in combination and if so suggestions for ratios to go for or do you think I'm being stupid and stick to known pairings and potentially save a wasted brew?
