a week ago today i started to process of making 25 ltrs of elderflower champagne/wine. i am making it in my fv bucket complete with airlock.

its a bit off hit and miss with this one so what im wondering is when should i bottle my hedge brew? does leaving it in fv for to long make it go off?

Hi G-Dog,

If you've got demijohns that would be better, if you haven't already skimmed out the flowers you should probably do that now. Otherwise, if you're likely to be bottling in the next week or so it should be ok in the FV under an airlock.

I haven't made this before and wasn't sure about gravities, so mine was strained to DJs after a week, has had 3 weeks in glass and has now fermented out and started to clear. I will probably be bottling it tonight and priming the champagne bottles with 50ml of white grape juice per bottle. This may not be the usual method but seemed to make sense to me.
