I've been doing a bit of research on factors that affect head retention in brews. I came across one source that said that the health of the yeast during fermentation will have an effect on head retention. Has anyone had any experience with improving head retention by improving fermentation conditions?
The reason I ask is because our recent Bohemian Pilsner has poor head retention issues. It was fermented using WLP800 yeast. It was most certainly underpitched and since it was fermented outside we had temp fluctuations from 5
