I've re-used yeast by pitching wort onto the whole yeast cake of a recently emptied FV but that is usually within a couple of hours.

I used an expensive liquid yeast vial for the first time for my Bad Santa recently and want to be able to re-use it. Thingnis I may not be able to brew again until midweek and I need to empty the fV today.

Can I just keep the kid sealed after i rack the beer off? Or should I just keep a jar of it in the fridge??

You can do both, I'd be tempted for the second option though as in racking off you're bringing a load of air into the fv and along with it comes potential risk.
Have a look at this post in the 'How To' section :thumb:
