Hey everyone, just scoping out some knowledge on Belgium strong pale/Trappist ales: Anyone know of any decent recipes of either Duvel or Chimay-like brews? I've had a look and apparently Duvel uses saaz and styrian goldings hops, but I'm not too sure on the brew process. Any feedback would be massively appreciated!

Cheers!

Hi and welcome. Never brewed any Belgium beers but a few on here have. One of our sponsors, the malt miller sell Belgium grains and yeast.

Whitelabs 500 is reported to be the Chimay yeast; 570 is reckoned to be the Duvel. Wyeast has equivalents. See here http://www.mrmalty.com/yeast.htm

There will be a few recipes about, all of which are likely to have a Pilsner malt base, though with hop schedules that may vary slightly. (I'm assuming you don't mean the darker Chimays) The yeast plays such a big part in these styles that you'll probably get a stylish beer, whatever the exact recipe.
