demijohn or fermenting bin

I'm just brewing a batch of Elderflower wine. The recipe says to filter the must into a demijohn after adding the yeast but there is too much must for one demijohn so I've gone with putting it in a fermentation bin under airlock.
Is there any reason a demijohn is better than a fermenting bin?

If you hadn't guessed, I'm new to wine making and am a little unsure of rights and wrongs.

Thanks in advance

Nothing special about demis, really.
As long as your cat/flies/breakfastcereal can't fall in, you're OK

DJs just look better, there's no worries with brewing in a fermenting bin :thumb:

The main advantage of a bin is that there's usually extra space for froth at the top during the initial fermentation (i.e. the first week). With a DJ you often have to top up after a week which, unless you're doing a pure grape juice wine or a turbocider, means recalculating the OG for the batch part way through.

You can also add ingredients to a bin more easily than a DJ, which is essential if you're doing the late addition method for flower wines, i.e. using half the volume of flowers and adding them after five days.

Dj's are better for clearing.

Less room = less chance of oxidation.

Aside from that, bin/ fermenter are fine.

Thanks guys, you've put my mind at rest. Can't wait to try it now, shame you have to leave it so long to age!

you may struggle with that. I can't keep my hands off my brews sometimes, after all, if it tastes good it's ready! but should that happen, make sure you put at least a bottle aside to try in a years time - the difference is massive!

I use both dj's and fermenting tubs.

I use a DJ when I'm trying something new just incase I make a hash of things so there's not a massive amount going down the drain.

I use the Tubs for brewing recipes I'm familiar with.
